Air Fryer Carrots
Large (6.5 qt) air fryer.
baby carrots (7-8) with tops on
extra virgin olive oil
sweet paprika, or Hungarian paprika
Salt and fresh cracked pepper to taste
Fresh chopped parsley for garnish (optional)
Cut the tops off the baby carrots, leaving about an inch for a rustic look once cooked.
Peel the carrots and place in a dish with sides so they can be seasoned.
Drizzle the olive oil over the carrots and shake the dish to toss the carrots. Make sure they are completely covered in oil.
Add half the paprika and onion powder. Toss to coat evenly. Then add the remaining paprika and onion powder and toss again. Carrots should be covered from top to tip in oil and seasoning.
Add salt and pepper to taste and give one final toss.
Place the carrots in a single layer in the bottom of the air fryer crisper basket. Close the lid.
Set the air fryer to 390° F and the timer for 10 minutes. At the five-minute mark, open the lid and quickly flip each carrot over. Close the lid and allow to cook the remaining 5 minutes.
Transfer to serving dish. Garnish with chopped parsley (optional), and serve warm.
If you do not have an air fryer, you can sauté the carrots in a cast iron skilled or roast in a 350° F oven until cooked to taste.
